Nigirizushi or nigiri sushi is the basic form of Edo sushi. Nigirizushi is made by pressing the sushi rice in between the chef’s palms and hands into small rectangular box and add a topping of the customer’s choice. In fact, Nigiri is the noun of the verb nigiru, which means to squeeze. The rice and the sashimi or other toppings is squeezed tight together, so it can be eat as a whole.

Procedure
While preparing Nigiri Sushi, your hands must be moist and cool. Prepare a bowl of ice water to keep up these requirements.
Step 1: Hold the meat with your left hand (or vice versa if you are NOT right-handed). At the same time, use the middle finger, ring finger, and pinky of your RIGHT hand to squeeze a ball of rice. The speciality of Nigiri Sushi rice is that the rice does not separate once the sushi is picked up, but will separate easily as you consume it.
Step 2: Use the thumb and index finger of your right hand to grab a pint of wasabi. Then, rub the wasabi onto the middle section of the meat.
Step 3: Attach the sushi rice onto the meat and shape the rice in any size you prefer.
Step 4: Lastly, push a “dimple” into the bottom of the rice to prevent the rice from being too intact for consumption.
